So many asked for the recipe for the cupcakes I posted pictures of yesterday, so I translated the Danish recipe to English (I hope I got it right!) for all you readers who might want to try to make my cute cupcakes yourselves. Thank you so much for all your nice comments too, by the way! Anyway, recipe for rainbow vanilla cupcakes (+ frosting)
Ingredients:
0.54 cup of sugar (125 gram sugar)
0.43 cup of soft butter (100 gram soft butter)
0.86 cup of flour (200 gram flour)
1 teaspoon of vanilla sugar
1½ teaspoon of baking powder
½ dl of milk
3 eggs
1/4 teaspoon of salt (about 1,7 gram)
How to:
1. Whip sugar and fat (butter) until it’s light and airy.
2. Whip one egg in it at a time and whip the mixture nicely after each egg.
3. Mix flour, salt and baking powder in another bowl.
4. Add the milk. Mix it all nicely in one bowl.
5. Put the mixture into the muffin tins and bake them in a prehated oven for 22-25 mins.
6. The oven should be preheated at 200 degrees (180 degrees at hot air)
7. The cakes should be totally cooled before they’re decorated with frosting
If you want the rainbow colouring in your cupcakes, just split up the mixture in different bowls and add a different food colour to each bowl. Put a little of each colour in the muffin tins, and it’ll end up getting rainbow colours!
Frosting (Buttercream):
0.54 cup of powdered sugar (125 g)
3 tablespoons of hot water (maybe more, depends)
1 cup of soft butter (250 gram soft butter)
Mix it all together with a hand-held mixer. Sometimes you need to put in more of some of the ingredients to get the right consistence, so play a little with it ’till you think it’s fine. You can of course also add some food colours to it, and in Denmark you can get those at most of your normal supermarkets. Also, I added some chocolate easter eggs on those I made yesterday, but you can add all sorts of decorating on top of it, to make it look cute. Use your imagination!

Linda: Det er bare at putte det ned i en frostpose, klippe et hul i et af hjørnerne (altså, det her er ikke normal glasur, det er det der hedder smørcreme) og så har vi så sådan en tut man kan sætte på så det får den slags form. Ligesom man tit gør ved flødeskum på lagkager og sådan noget 😛
