Chili/Cheddar Bagels

These bagels are actually not as hard to make, as first assumed.. and they are delicious, spicy and perfect as sandwich bread, brunch, lunch or an easy dinner! 

De her bagels er faktisk ikke så svære at lave, som man måske først tror.. og de er lækre, krydrede og perfekte til sandwiches til madpakken eller som en let aftensmad!

RECIPE/OPSKRIFT (16 bagels): 
– 900g flour/mel
– 0,5 dl light sirup/lys sirup
– 2 tbsp oil/spsk olie
– 1 tbsp salt/spsk salt
– 5 dl lukewarm water/lunkent vand
– 50g yeast/gær
– 1 tbsp sugar/spsk sukker
– 2 tsp chilipowder/tsk chilipulver

1. Put the yeast into the lukewarm water, add the rest of the ingredients and then knead the dough until it’s smooth and elastic. Let the dough rest for 15 minutes under a tea towel. // Rør gæren ud i det lunkne vand, tilføj dernæst de resterende ingredienser og ælt dejen indtil den er glat og spændstig. Lad dejen hvile cirka 15 minutter under et viskestykke. 
2. Split the dough into 16 pieces and roll them out into 25-30cm long pieces. Shape them into a ring by sticking the ends together (use water as glue). Let them rest for 30 minutes. // Del dejen i 16 stykker og rul dem ud i pølser der er 25-30cm lange. De skal dernæst samles til en ring. Vand kan bruges som “lim” til at samle dem. Lad dem dernæst hvile i 30 minutter. 
3. Just before the 30 minutes pass, put some water in a pan and let it boil. Turn the oven on 200 degrees celcius. Boil each bagel 2 minutes on each side, and then put them on a baking sheet. Sprinkle them with the cheddar cheese, and then bake them for 30-40 minutes. Enjoy with your favorite filling! // Lige før de 30 minutter er gået, skal der sættes noget vand til at koge i en gryde. Tænd samtidigt ovnen på 200 grader. Kog hver bagel 2 minutter på hver side, og put dem så over på bagepapir. Pynt dem med cheddar osten, og bag dem så i 30-40 minutter. Nyd dem dernæst med jeres absolutte yndlings fyld!

Chili Cheese Delights

Most people know of Chili Cheese Tops, sold from a lot of fast food stores – but, it’s actually quite easy to make them fromt scratch and they turn out so yummy! These little chili cheese delights are definitely worth a try, I’d say! 

De fleste af jer kender sikkert de populære Chili Cheese Tops, som diverse fast food kæder sælger – men, det er faktisk ret nemt at lave dem fra bunden selv, og de bliver SÅ lækre! De her små chili cheese delights er helt sikkert et forsøg værd!

RECIPE/OPSKRIFT (25 delights): 
– 300g cheddar cheese/cheddar ost
– 4 tbsp chopped jalapeños/spsk hakkede jalapeños
– 2 tsp paprika/tsk paprika
– 2 dl flour/hvedemel
– 4 eggwhites/æggehvider
– 3 dl breadcrumbs/rasp
– salt & pepper/peber
– frying oil/fritureolie

1. Grate the cheddar cheese, as small as possible, and mix it with the chopped jalapeños and the paprika. // Riv osten (hvis det er revet i forvejen, så hak det mindre), så småt som muligt, og bland det med de finthakkede jalapeños og paprikaen. 
2. Shape round little balls of the cheese-mixture, and turn them into the flour, then the eggwhites and lastly in the breadcrumbs (mixed with salt and pepper). If you want to make sure they won’t burst a little tip is to turn them in eggwhites once more and then also once more in the breadcrumbs. // Form små kugler af oste-miksen, og vend dem dernæst i mel, så æggehvider og til sidst i raspen (som er blandet med salt og peber) – for at være sikre på at de ikke springer, kan de dernæst vendes én gang til i æggehviderne og så endnu en gang i rasp.  
3. Fry them in hot oil (Make sure it’s between 160-165 degrees celcius at all times – if lower, the delights will burst!) until they’re golden, and then leave them to drip on a plate. Serve when still warm as a delicious little snack or as a starter! // Dybsteg dem i varm olie (Olien SKAL være imellem 160-165 gader varm hele tiden – Hvis temperaturen bliver lavere, så går der hul og osten flyder ud!) indtil de er gyldne, og lad dem dryppe af på en tallerken eller rist. Server dem så imens de stadig er lune, som en lækker snack eller en forret!

Soft Rye Pretzel

Lately I’ve been missing soft pretzels a lot. They remind me of New York so much, and Mia Malene and I were sitting just across the American Museum of Natural History, sharing our first soft pretzel. So yummy! Anyway, I decided to bake them yesterday – in a rye version though. They were delicious, but they really do not give you that “New York Soft Pretzel” feeling. Still good though! På det sidste har jeg savnet bløde pretzels en del. De minder mig så meget om New York, og da Mia Malene og jeg sad overfor American Museum of Natural History og delte vores første bløde pretzel. Mums! Nå, men jeg bestemte mig for at bage disse igår – Det er en fuldkorns version. De smagte godt, men de gav bare ikke den der “New York Soft Pretzel” følelse. Dog stadig gode! Pizza Rolls

Pizza rolls are something that is delicious to make for lunch boxes or picnics. I really love them. Yummy! These are with ham and ketchup. 

Ingredients:
– 50 g yeast
– 3 dl lukewarm water
– 1 tsp salt
– 2 tbsp oil
– 500 g flour

How to:
Turn oven on 200 celcius degrees. Put the yeast in a big bowl and add the lukewarm water. Mix until the yeast has dissolved. Add salt and oil. After that, add ¾ of the flour with a ladle. Then take out the dough on a table with a bit of flour on it, and start kneading it. Then roll out the dough so it becomes a square. Add the ketchup on top and then the ham. Roll it all and then cut it into about 20 rolls. Put in the oven for about 20 minutes.

Pizzasnegle er altid gode i madpakken eller til en god picnic. Jeg elsker dem. Mums! Disse som min mor og jeg lavede i dag, er med ketchup og skinkestrimler. Opskriften på dejen kan findes HER.

(English below) Elefanten har kæmpe betydning for (English below) Elefanten har kæmpe betydning for thaierne - De har haft stor betydning som arbejdsdyr, både i krig, som taxa for lokale og i junglen.. men også for turisme. Jeg selv har haft dårlig samvittighed siden jeg i 2016 betalte for at besøge elefanter trænet til at blive reddet på og lænket når der ikke var turister. Av. 
Denne gang besøgte vi et elefant “plejehjem”, hvis man kan kalde det dét! Alle 4 af de her smukke dyr lever i junglen med deres mahouter, som i øvrigt betegner dem som sine kæledyr. 🐘
De er reddet fra et liv som elefanter i cirkus eller som “taxa elefant” for turister. Nuvel, de ser stadig turister hver eneste dag - men de bliver fodret i massevis af bananer, får mudderbade og bliver badet i floden og virker generelt bare tilpasse! Det bedste er, at de ikke er lænket og mahouterne træner dem udelukkende ved hjælp af lyde (for elefanter ser ikke ret godt!) 
Kæmpe anbefaling at besøge sådan et sted 🥹

Elephants mean a lot to the thai people - They used them for centuries as working animals; In war, as a local taxi and even for tourists to ride on or for shows..
In 2016 I experienced this first hand when I paid to watch elephants in a show. Elephants that were chained up when they didn’t perform. I’ve felt bad about it ever since. 
This time we visited an Elephant sanctuary - A place where the elephants have been saved from the tourism and working industry. The mahouts live in the jungle with them and even consider them their pets! 🐘 
Yes, they do still get a lot of tourists visiting them - but they get fed lots of bananas, get mud baths and washed in the river and just generally seem very happy! Best part? No chains! The mahouts only train them by using sounds (seeing as elephants don’t have a great sight).
I really recommend visiting this place! 🥹

First two days in Krabi are almost over - It’s the end of the monsoon season here, so we still haven’t experienced a clear blue sky 🌥️ However, it is still nice and hot, even when it rains 😌
